Recipe: Watermelon, lime and mint foam

Watermelon, lime and mint foam.

HammondCare’s executive chef, Peter Morgan-Jones, has agreed to share the following recipe with Palliative Matters readers from his cookbook, "Don't Give Me Eggs that Bounce".

The foam is suitable for people on smooth, pureed diets and those who can eat thickened fluids.

Serves 1–2
Prep 5 mins

Ingredients:

300g seedless watermelon, chopped into cubes
Juice of ¼ lime
6 mint sprigs
8 scoops of Spuma Instant (available from www.elancateringequipment.com.au/molecular-gastronomy/aged-care-products/spuma-instant)

Method:

Blend watermelon cubes in a food processor with the lime juice and mint sprigs. Strain through a sieve.

Measure 200ml of juice and add 8 small scoops of Spuma.

Pour into cream whipping gun and charge with cream whipping bulb. Shake for 30 seconds. Pour carefully into a glass.
